Ready in 20 minutes
- 400g quinoa
- 250g frozen peas
- 8 radishes, finely sliced
- ½ cucumber, peeled
- Handful of finely chopped
- 6 spring onions, finely sliced
- I lemon, juiced
- 2 tbsp olive oil
Place the quinoa in 800g boiling water, simmer for 15 minutes until liquid has been absorbed.
Blanch the peas for one minute in boiling water then cool for one minute in ice-cold water.
Using a peeler, peel the cucumber into ribbons.
Once the quinoa is cool, place in a bowl with the peas, spring onion, cucumber, mint and radishes. Mix in the olive oil and lemon juice. Gently mix, then serve.
